Restaurants make our local guides when a zero waster can walk out having made no trash on their end. Because reducing food waste is number three in the book Drawdown, any restaurant that composts back of house or front, makes the top of our list. Other qualifiers are: plastic straws are on-demand only or there is a plastic straw alternative, use of reusable serve-ware,(compostableserve-ware only makes the list if the restaurant offers composting on-site), compostable take-out trays, proper front and back of house recycling and encouragement of bring your own. We also consider restaurants that are taking active steps to decrease their landfill contributions. Any styrofoam is usually an automatic disqualification.
